This cake was a favorite growing up and because there are blueberries in it for some reason we never felt guilty about eating it for breakfast… despite the word “cake” in the title… It’s an easy recipe to throw together and is perfect for a group coming over for breakfast.
1 1/2 cups sugar
1/2 cup butter
1/2 cup milk
2 1/2 cups flour
1 1/2- 2 cups blueberries
2 tsp. baking powder
1 tsp vanilla
Heat oven to 375 degrees and grease a bundt / tube pan.
Cream sugar and butter. Add eggs, milk, flour, baking powder and vanilla. Fold in blueberries. Pour (will be pretty stiff) into bundt pan and sprinkle the top with sugar (an essential and delicious step).
Bake for 40ish (can be sooner) minutes or until it tests done and is golden brown on top. Mine was perfectly done at 40 minutes exactly.
