Growing up I loved when my mom would make Lemon Bread… it’s one of those addictive recipes and because it’s a fruit based bread you can easily rationalize having a slice with breakfast.
Bread Ingredients:
2 cups sugar
1 cup vegetable oil
3 eggs
1 1/2 tsp vanilla extract
1 tsp lemon extract
3 cups all-purpose flour
1 1/2 tsp baking powder
1 1/2 tsp salt
1 1/2 cups milk
Icing Ingredients and Directions:
Combine 2 tbs lemon juice with 3/4 cups confectioner sugar. Mix until smooth.
Directions
1. Preheat oven to 350*F. Grease and flour 2 loaf pans. Combine sugar, oil, eggs, vanilla and lemon extracts in a large bowl; mix well.
2. Sift together flour, baking powder and salt. Add flour mixture and milk to sugar mixture alternately, mixing well after each addition.
3. Bake loaves for 45 min. or until a toothpick inserted in center comes out clean. Loosen edges from sides of pans. Cool loaves in pans for 10 min. Place on wire racks.
4. Drizzle icing over warm loaves. I made mine in a bundt pan which took about about 65 minutes.

Yummy!! That looks good! My Mom was a great cook growing up and she still is today. We had all kinds of food. I remember she had me and my sister in the kitchen with her when we were very young. That’s probably why I love to cook today! She would make lasagna, gumbo, burritos and of course country food to since were from Arkansas!! Pork chops anyone?
Mmmm gumbo… I’ve always wanted to try making that! Doesn’t it make all the difference to have parents that start you when you’re young? My mom was the same way!
